Origin stories matter. For example, learning the origin of a coffee gives you insight into where the coffee was grown, how the beans were processed, what flavors you might expect to find in your cup, and the many hard-working people responsible each step along the way.
Rabble & Lion Coffee’s origin story is represented in the rabble and the lion, which are the inspiration for our company and our coffee. The rabble represents everyone who gets up in the morning, puts on their shoes and works for a living. The rabble is the backbone of our society, even though they rarely get the credit they deserve. The lion represents courage in adversity. Regardless of what the day throws at it, the lion has the will to make its way.
Rabble & Lion Coffee was founded by two guys, Craig and Paul, who met at a coffee roasting course and share a passion for coffee. For Craig and Paul, our work ethic and courage are fueled by family. Family is the reason we get up in the morning (other than great coffee, of course). For Craig, inspiration comes from his children. His stepson Ricardo while a small package is the embodiment of a lion. Born with a genetic syndrome called Loeys-Dietz, Ricardo fights everyday to overcome his many challenges. And his daughter’s name, Leonor, when shortened to Leo is the symbol of a lion. Paul is inspired by his two sons, Liam and Grayson, his wife and by stories of his ancestors who immigrated to the United States from Ireland with only the clothes on their backs and a fighting spirit.
Using these inspirations, we aim to bring you great coffee. We source single-origin Arabica beans with distinct flavor profiles. We procure the best coffee grown and cultivated using transparent and sustainable practices, roast it locally and provide it to discerning customers.
